Abstract

Currently there is a great demand in the agri-food sector such as quinoa for its high protein value, being the ideal food for human beings. In their commercialization and export processes, they request that they comply with the quality regulations of their products. One of the causes that harm the final quality of the quinoa grain is a certain number of imperfections that bring with it, such as the dimensions and impurities and the lack of technological instruments or means to corroborate the quality assurance of quinoa. Therefore, it opened us to the need to investigate an automatic system that recognizes the quality of the quinoa grain, one of the alternatives is the artificial vision system.  It is developed in the phases of Digital Image Processing, comparing the methods and techniques according to its characteristics of the quinoa grain and obtaining an optimal result for its commercialization in national and international markets. The results of this investigation show an efficiency of 96.75%, sensitivity of 82.05% and a specificity of 99.11%. It is concluded that the artificial vision system meets all our expectations that the research leads.
