Abstract

Carbohydrate is a rich source of nutrition in human being, in which milk is a primary and rich source of infant nutrition. This white liquid food (milk) produced by the mammary glands of mammals. Milk contains 90% part as water and in 10% as other nutrients like carbohydrate, protein, fats, vitamins, minerals etc. The composition of milk varies from species to species. Early lactation milk which is known as colostrum, it contains different antibodies and protects new born from various diseases like tuberculosis, microbial infections etc. Milk acts as anti-inflammatory, anti-fungal, anti-bacterial, anti-coagulant, anti-cancer etc. Keep in mind earlier research of milk,Gaddi Sheep’s [this is a specific breed of Himalayan region] milk is collectedand isolate oligosaccharides by Kobata and Ginsberg method. Isolated oligosaccharide named asGaddiose, it is a heptasaccharide. Structure of Gaddiose is confirmed by HPLC then repeated silica gel chromatography and further chemical degradation. The isolated structure is supported by NMR (1H, 13C, HSQC, HMBC, COSY, TOCSY etc.) and Mass Spectroscopy as-
